My entire family have always loved cheesy cauliflower, this nutty version takes it to a different dimension.
Half a head of firm, fresh cauliflower. Wash and dry well.
1 tbsp butter
2 tbsp almond flour
1 egg yolk.
50ml whole milk, unsweetened almond milk..up to you!
Grated cheese, please don’t ask me how much…roughly 100g?
Freshly ground black pepper and freshly grated nutmeg.
Steam cauliflower for a few mins.
Melt butter together with almonds to make a roux. Gradually add milk then egg yolk and cheese. Season to taste. Ok I like to then blend this with my “soup” blender stick, makes it frothy and creamy.
Pour over cauliflower and bake for 15 mins or so until browned and bubbling. It’s not “cloying” or “gloppy” as normal cheese sauce, thinner but has so much more flavour. Hope you like it!
