Make sure your garlic bulb is really fresh, pop onto a square of tinfoil, drizzle with a little olive oil. Close the package and roast when you know the oven is on for a good 40 mins or so. Cool, squeeze the pulp out to make deliciously flavoured butter, mayo or add to a salad dressing. Scrumptious
