Summer on a plate

Just want to say that food doesn’t have to be time consuming or clever, for me it does have to look tasty so I do think about colours as I’m randomly pulling things out of the fridge.  This was my lunch, happy and full!

Just shredded some lettuce, chopped a small peach (remove skin, I do), sliced half an avocado (using the rest for a dip later), a few sun dried tomatoes, a couple of slices of smoked meat, crumbled some fresh cheese, added a few walnuts and drizzled with a tiny amount of olive oil and a squeeze of lemon juice.
