Kofta Curry with Spinach and Cauliflower Rice

Holy wow, this was good!
Ingredients for Kofta (meatballs):

450g minced beef
Knob of grated ginger and 2 cloves grated garlic

1 small red chilli, de seeded and finely chopped

1 tsp ground cumin, coriander, garam masala, black pepper

1/2 tsp turmeric

A good tbsp of fresh mint, very finely chopped

Mix all together very well, shape into small meatballs and chill for at least 30 mins.
Sauce:

1 large onion, finely diced

Confession, I cheated and used 2 tbsp of sugar/gluten free curry paste (shoot me!)

Frozen spinach, I used 6 small “blocks”

Small tin of cherry tomatoes 

Extra chopped mint leaves

  
Method:

Heat oil of choice in a large shallow frying pan. Cook the meatballs, turning to brown evenly. Takes about 10 mins, set aside.

Sauté the onion for a few mins until softened, add the curry paste and cook for a couple of minutes then add the tomatoes, spinach and about half a cup of water. Let the sauce cook for another 10 mins stirring every now and then. Meatballs now go into the sauce and simmer for 5 mins. Add a splash more water if necessary.

  
Served with cauliflower rice (blitz cauliflower in a blender, heat a little oil and butter in a pan and sauté for just a few minutes. Fluffy heaven!)
