Fajita spice, tomato salsa – please, please make your own!

 Yeah I know this is easy peasy but many of us in the Mediterranean like fajitas but can’t buy readily made stuff (plus the packs are full of sugar and sodium). Anyhow this works well for us, find your spice blend and kindly share it with me? 🙂  

It’s really ridiculously easy, follow your taste buds and combine:

Sea salt and freshly ground black pepper.

Ground cumin, chilli powder, sweet paprika powder, a little cinnamon, dried ground oregano.

  

Tomato Salsa:

Gently fry diced onion, garlic, chilli in a little olive oil until softened. Chuck your diced or tinned tomatoes in and some tinned sweet corn if liked.  Add 1/2 tsp of fajita spice!  a splash of balsamic vinegar and a little water. (Sweeten by all means with a tsp of brown sugar or honey)  Simmer to reduce then add a squeeze of fresh lemon juice and lots of chopped parsley (or if you’re lucky coriander – not available where I am).

Veggies:

Lots of sautéed onions and peppers or whatever you like.

Meat:

Slice thinly, I use chicken, throw on the heat in a little oil. Add spice mix when half cooked, toss around until ready. 

We made way too much, bonus as today’s sail was 8 hours so leftovers made perfect sandwiches underway – happy days  and tummies!
