The Best Beef Stew, melt in the mouth good..

  
I’m pretty critical about food, food I cook anyway, often wondering what I could have done differently. Wow this was amazing, personally I wouldn’t change a thing and the whole lot was devoured by just three of us last night.

Ingredients and method:

800g beef shin (I thought we’d have leftovers, boy did that meat shrink!) Dust the whole joint in seasoned flour and sear until browned evenly. Remove from pan.

  
2 large onions, 4 decent sized carrots, 4 sticks celery all diced finely. Whole cloves of garlic, unpeeled and bashed slightly. 5 fresh bay leaves. Sweat down slowly until softened, roughly 5 mins.

 Add to the vegetables 600ml of good red wine, I used Chianti.  150ml of beef stock and 3 generous tblsp of tomato purĂ©e, get the homemade Italian stuff if you can from delis. Bring this to the boil, stir and scrape the pan as you go. Simmer for a few minutes.

 
Transfer the whole lot to slow cooker and cook on the high setting for 6 hours.  

  

Remove the meat from the pan and leave to rest. Bubble the sauce down to thicken. Shred rather than chop the meat in thick chunk.  Pour sauce over and serve with whatever you fancy.  We will definitely be making this again soon 🙂
