Sweet Potato Frittata 

  
Sweet potatoes, red onions, bacon and tangy Parmesan cheese. Smells amazing and was all done in the same pan! 

Simple as anything. Preheat oven to 180 degrees.

Simply peel and cube the sweet potatoes (use normal if you prefer) and par boil until slightly softened. 

Gently fry sliced red onions and bacon until coloured. Add spinach and sauté until wilted. 

  
Whisk 6 eggs, season and add a generous handful of grated Parmesan cheese. Pour over the sautéed ingredients. Bake for approx. 25 minutes until set.
