Veggie Burgers
Chickpea, carrot, red pepper, onions and lots of spices. These are really delicious, very simple to make and if you make too much? Leave the rest in the fridge for the next day or cook them all and eat them cold with dips! Note: they need refrigerating for a few hours before cooking, quite delicate so need that time to toughen up!
Ingredients:100g of fresh brown bread crumbs. 1 can of chickpeas, drained and rinsed. 1 red onion, roughly chopped. 2 carrots, grated. 1 red pepper, roughly ...
Tarka Dhal
My only comment would be that it takes ages to simmer the lentils, if I could I'd probably buy them pre-cooked! (Not laziness, simply power consumption on a boat talking).
Ingredients: 200g dried yellow split peas. Rinse them well then cover with about a litre of water in a saucepan and simmer for about 35 minutes, or until they're softened. Skim the foam off the top and stir occasionally throughout cooking. By the end of the cooking time there won't be much water left in the pan, just ...
Spiced Red Pepper Falafel
Delicious both hot and cold, served with the feta & red pepper dip they were truly amazing. The mixture is not easy to shape as it's quite wet. I ended up scooping it out with a tablespoon, place dollops on baking paper in an oven tray.
Ingredients: 1 tin of chickpeas, drained and rinsed. 1 medium sized red onion, very finely diced. 2 cloves of garlic, grated. 1 roasted red pepper (from a jar), very finely diced. Small knob of ginger, grated.
2 tsp ground cumin. 1 tsp ground ...
Vegan Cauliflower, Red Pepper & Pea Curry

Feta & Red Pepper Dip
Tasty combination of sharp and sweet, ready in less than 2 minutes.
Simply blend together until smooth:
200g of feta cheese. 2 roasted red peppers from a jar along with a tbsp of oil from the jar. A clove of garlic. Black pepper. 1/2 tsp ground cumin and a few chilli flakes.
Eating later with spicy baked falafel and marinated chilli courgette salad. Salivating at the thought!
Avocado Dressing
Smooth and creamy, like a guacamole really!
In a small food processor:
Blitz together a ripe chopped avocado; 2 cloves of garlic and a finely chopped spring onion. Add 2 tbsp of extra virgin olive oil, the juice of half a lemon and a few drops of tabasco. Blitz again then add a little water and blend until you've got the consistency you want. Season with salt and black pepper. Add more lemon juice if wanted.
Delicious with salad, couscous. Use as a dip or spread on bread/crackers. ...
Lemon, Ginger & Mint Iced Tea
I can't be alone in saying just drinking water (lots and lots as it's so hot) is getting a bit boring. Quick, easy to make and it must be better than shop bought filled with various additives. If you've got a supply of herbal teas give this a whirl! For this I used lemon and ginger herbal infused teabags.
To make 1 litre:
4 lemon & Ginger herbal teabags. The rind of 1 ripe lemon. A small handful of mint leaves. Juice of the lemon and a tbsp of Agave syrup (substitute honey or don't ...

Briam
Absolutely delicious both hot and at room temperature. Crumble some feta over to make it a more substantial meal. Do use good quality olive oil. Oven 190 degrees. Grab a large roasting tin and layer the vegetables in this order:
Peel and thickly slice a couple of potatoes (I used just one big sweet potato). 1 large onion, sliced. A couple of aubergines, courgettes, red and green pepper, about 6 ripe vine tomatoes all thickly sliced. Lots of chopped parsley, some salt and freshly ground ...
Sweet & Sour quick Pickled Salad
Isn't it funny how easy it is to forget how delicious something was if you've not eaten it for a decade or more? Invited a lone sailor to have supper with us a couple of days ago, he brought his "Grandmothers special salad" recipe to share. Reminded me and the Boss of something we'd not eaten for years. Happy days!
It's almost too simple to write up but, if you like us, had forgotten the crisp simple flavours? Well, you might be nostalgically pleased.
Ingredients for the dressing: simply ...
