Smooth and creamy, like a guacamole really!
In a small food processor:
Blitz together a ripe chopped avocado; 2 cloves of garlic and a finely chopped spring onion. Add 2 tbsp of extra virgin olive oil, the juice of half a lemon and a few drops of tabasco. Blitz again then add a little water and blend until you’ve got the consistency you want. Season with salt and black pepper. Add more lemon juice if wanted.
Delicious with salad, couscous. Use as a dip or spread on bread/crackers. Lovely! (My supper: vegetable couscous, feta with fresh oregano and delicious avocado dressing).
