Veggie Burgers

Chickpea, carrot, red pepper, onions and lots of spices. These are really delicious, very simple to make and if you make too much? Leave the rest in the fridge for the next day or cook them all and eat them cold with dips! Note: they need refrigerating for a few hours before cooking, quite delicate so need that time to toughen up! 

Ingredients:100g of fresh brown bread crumbs. 1 can of chickpeas, drained and rinsed. 1 red onion, roughly chopped. 2 carrots, grated. 1 red pepper, roughly chopped. 1 clove of garlic, peeled and chopped. 2 tbsp chopped parsley.

1/2 tsp chilli flakes. 1 tsp ground coriander; cumin and sweet paprika powder. Salt and freshly ground black pepper. 

Method: In a small food processor blitz the chickpeas together with the onion, garlic, red pepper, parsley and grated carrot. You may need to scrape the mixture down and blitz again.

Tip the mixture into a bowl, add the breadcrumbs and spices. Mix together well using your hands. Add seasoning to taste. Mix again.  Shape the mixture into 6 balls, squeeze tightly, put on a tray and flatten slightly. Now chill for several hours or overnight. 


Heat a little vegetable oil in a griddle pan. Fry each burger for roughly 4 minutes each side until golden in colour. Do NOT feel tempted to turn over regularly, just be patient then turn over using a spatula. 

These go well with anything, roasted vegetable couscous is today’s option along with some chilli & tomato salsa. Hope you like them 🙂
