Soup weather is finally here, for me that calls for celebration! This is a gently spiced soup both comforting and filling.
2 big ripe tomatoes, sliced thickly. 2 cloves of garlic, crushed. A few bay leaves. Olive oil. Seasoning.
1 large red onion, diced. 1/2 tsp each of chilli powder, ground cumin and ground coriander.
80g red lentils, rinsed. 1 tbsp tomato extract. 1/2 tsp sugar or honey. Hot vegetable stock to just cover ingredients.
Method:
Roast tomatoes in a tray together with the garlic, bay leaves and seasoning for 35 mins.
Diced onion for a few minutes, add the spices and continue to stir until onion is coated. Add the rinsed lentils, roasted tomatoes and other ingredients. Simmer for 30 minutes. Blend to desired consistency. Lovely with a swirl of Greek yoghurt.
