Slow cooked Belly Pork with Asian flavours

A much underrated and cheap joint of meat, yes it's fatty but that means you can cook for ages and skim the fat off yet it stays so moist and tender. Tons more belly pork recipes to come over the winter! It takes just a few minutes to prepare then switch on the slow cooker and enjoy the really good aroma wafting away for best part of the day. (I'm a lazy cook so it seems..)   You'll need 500g or more of belly pork to serve 2 people, it shrinks when cooked! Just chop an onion, bash a few ...

Comfort Food Chicken Pie (effortless)!

So here's the 2nd meal from my chicken. Prepared in minutes, baked for less than half an hour. I could get used to this type of cooking :)   Sauté onions with a small pack of bacon lardons.  Add some chopped mushrooms, a drained tin of sweetcorn and a small pack of frozen peas.    Shred some chicken and use some of the jellied stock.  Add to the pan, season to taste.     Feel free to splash a little white wine in or chopped herbs (I just used a ...

Planning overnight or much longer passages, it doesn’t always go to plan!

(Here's what should have happened, either read or scroll to the end for the reality). Well there's currently five of us onboard, three adults and two children so more planning needed to ensure everyone's comfortable and happy. It's a 25 hour or so trip, 163nm calculated at 6.5 kts.  From a galley perspective. I always make sure I've stocked up, got extra milk etc and cooked the evening meal plus snacks in advance. I don't often get seasick but you never know so at the very least I make ...

“Real Men don’t eat quiche”? Nuts!

Silly introduction but I've lost count how many times this has been said to me, anyhow this walnut crust version was gobbled up within 2 days! I wanted a crumbly but firm crust without too much hassle, this is easier than normal pastry :-)    For the crust: 2 1/2 cups walnuts blitzed finely in your processor 2 tblsp butter 1 tblsp coconut oil A generous pinch of salt and freshly ground black pepper Just whizz it all together until combined then press, using your hands, into ...

Man Overboard Proceedures

http://www.yachtingmonthly.com/sailing-skills/how-an-8st-crew-can-recover-a-20st-mob-31075 Someone asked me recently if I get scared when sailing. I answered no, not scared as such..twitched perhaps in new (to me) situations usually based on the "heck, can I do this properly" factor.  I have been in scary situations but not on our boat. Several years ago on a night watch mid Atlantic I was trying to alter course during a squall. My hand hit standby rather than the plus / minus buttons, ...

Zakynthos first impressions and concerns, happy to be proven wrong!

Admitting neither of us were looking forward to coming to Zakynthos town and, on arriving, I wasn't initially impressed. Busy town wall, noisy Main Street with busy traffic, Med mooring, being glared at by the people on neighbouring cat who then asked us to move. Why? Oh our fenders were touching theirs...what???? We didn't move and I did explain to him what fenders were designed to do.  There's a chap called Dennis who offers to sort the paperwork out, it costs 15 euro per day to be ...

The Ionian Islands continue to captivate me, here’s where we’ve spent the last week or two. The boat repairs are finished, hooray!

Boat repairs finished in Sivota, busy little holiday village. Lots of flotilla and bareboat companies but they're pretty well managed. That said watching the Med mooring stunts is pure entertainment!  On the boat repairs, flexible couplings on the engines. Then the gear box fell apart, again.....  Luckily I'd just chucked the lines ashore to our very helpful neighbour Mike when David realised he had no connection between the Port engine and propeller. There's a technical term ...

Spetzofai, a spicy Greek sausage and vegetable casserole.

I just love the name, sounds like something Hermione would say whilst pointing her wand! It's delicious, I got so excited when the very lovely Spyridoula (from the fantastic butcher in Ay Eufimia)  me how to make and then even more so to eat :)  I don't know what it'll taste like for those of you who can't get Greek sausages though.. These sausages are the same thickness as regular "bangers", but have the texture of good frankfurters, very rustic and oh so delicious!    ...

Lamb chops, magherita style

Wow, the butcher here in Ay Eufimia is incredible! I'm in heaven, easily pleased I know :).  If you come here and can't see what you want just ask, they've got it all.    So these lamb chops were baa-ing for me to buy them. Wanted something tasty and quick, if you're as hot as I am right now you'll understand.    Marinade: 2 medium sized ripe tomatoes, 1 small red onion, 2 cloves of garlic, 2 small anchovy fillets, about 10 pitted black olives, chopped chilli to suit ...

Gulf of Amvrakia, German Beach Towels! Vonitsa and the breathtaking Spartakhori

We both felt pretty tired and a tad stressed after our week on the hard for boat jobs so went in search of solitude. Yes, even in high season it's possible here!  A quick grocery run then headed to the inland lagoon of Amvrakikos Kolpos. Not a boat insight, nothing at all but endless miles of crystal clear water and amazing scenery.     There were, however two caravans on the beach and two sun loungers.  Believe it or not the caravans were German registered and I ...
