"I can't believe it's not granola" Crunchy nuts with gorgeous dried fruit, coconut and flaxseed. Really delicious on its own or, my favourite, with chopped fresh fruit and some Greek yoghurt. Potato, Butternut squash and Spinach cakes

Having cleaned my, ahem, well seasoned oven this morning I needed an experiment and am rather chuffed with the result.    To make 4 decent sized ones I used: 2 medium sized potatoes, (use sweet potato by all means) peeled and cubed. Soufflé Egg Muffins

Easy peasy but they do sink a bit when they cool.. This made enough for 6 deep muffins. 4 eggs, separated 2 slices Parma ham 1 finely diced red onion 1 medium sized grated courgette (zucchini if that makes more sense?) 1 medium sized grated carrot Pepper and herbs (I used oregano) Set oven to 180 Whisk egg whites until stiff. Coconut Almond Pancakes

Definitely more like an American pancake but they don't get little bubbles when cooking as you're used to and take a little persuading to hold their shape in the beginning. Or perhaps I was just being impatient? Anyhow I poured my heaped spoonful in, waited until it started setting and then gently coaxed it into the shape I wanted with a spatula.
