Homemade Paneer, Tomato & Spinach Curry
If only I'd known years ago just how simple, cheap and delicious paneer was to make myself! Thanks to a friend, Sheena, for sharing your recipe. It takes just 2 ingredients and roughly 10 minutes of "hands on" time.

Soup weather is finally here, for me that calls for celebration! This is a gently spiced soup both comforting and filling.
2 big ripe tomatoes, sliced thickly. 2 cloves of garlic, crushed. A few bay leaves. Olive oil. Seasoning.
1 large red onion, diced. 1/2 tsp each of chilli powder, ground cumin and ground coriander.
80g red lentils, rinsed. 1 tbsp tomato extract. 1/2 tsp sugar or honey. Hot vegetable stock to just cover ingredients.

Chickpea, carrot, red pepper, onions and lots of spices. These are really delicious, very simple to make and if you make too much? Leave the rest in the fridge for the next day or cook them all and eat them cold with dips! Note: they need refrigerating for a few hours before cooking, quite delicate so need that time to toughen up!

My only comment would be that it takes ages to simmer the lentils, if I could I'd probably buy them pre-cooked! (Not laziness, simply power consumption on a boat talking).

Delicious both hot and cold, served with the feta & red pepper dip they were truly amazing. The mixture is not easy to shape as it's quite wet. I ended up scooping it out with a tablespoon, place dollops on baking paper in an oven tray.

Roasted Beetroot & Sweet Potato Soup
I'm not sure how best to describe the flavours but here goes... Earthy richness from the beetroot, sweetness from the potato and garlic and just enough spice and chilli to give a kick. Perfect on this rainy thunderstorm filled day in Corfu!
