"I can't believe it's not granola" Crunchy nuts with gorgeous dried fruit, coconut and flaxseed. Really delicious on its own or, my favourite, with chopped fresh fruit and some Greek yoghurt. Brilliant power snack! 1 cup of roughly chopped walnuts. 1 cup of almonds. Half roughly chopped, the rest whole. 1 cup of chopped dried fruit. I used figs and prunes. 3 tbsp flaxseed. 3 tbsp desiccated coconut. 1 tbsp coconut oil. 1 tbsp honey or maple syrup. Stir everything together until ...

Crunchy Peanut Butter & Chocolate Chunk Cookies

Crunchy peanut flavour with, hen still warm, molten chunks of chocolate oozing as you bite. Well, these certainly hit the spot! Simple as can be, everything is mixed in the same bowl and the mixture isn't too sticky. Perfect for everyone and definitely those with young children wanting to get them hands on in the galley. Cream together 200g of peanut butter, smooth or crunchy, with 150g of light brown sugar and a tsp of vanilla extract.  Add an egg and 3 tblsp of milk, mix well. Then ...

Chocolate Coffee Amaretto Mousse

I know, it's a bit naughty but I can't be good all the time! Melt 175 grams of dark chocolate. Cool slightly then add a shot of espresso and 2 tblsp of amaretto. Separate 3 eggs. Add the yolks to the chocolate. Whisk the whites. Add a generous spoon to the chocolate mixture to loosen it then carefully fold the rest in. Crush some amaretti biscuits until they resemble breadcrumbs. Add a good splosh of amaretto liqueur.  Now the naughtiness is up to you, either use tiny glasses or bigger ...

Spiced Chocolate Cupcakes

Made these yesterday as a thank you gift. I'm weird as don't like cake really but these smelled incredible and the Boss scoffed one as soon as they were cool enough to handle. My friends emailed asking for the recipe so here it is! Preheat oven to 180 degrees. Cream together 200g of softened butter and 200g of sugar.  Beat 4 eggs and add gradually (if the mixture curdles just add a spoon of flour and be more patient adding the rest of the egg!). Gently fold in 200g of self ...

Chocolate Coconut Bites

My first attempt, not very pretty but tasty? Oh yes! If I'd remembered to spread the paste on greaseproof paper they would've been far easier to remove. Ingredients: 100g coconut (desiccated or flour, I only had flour) 1 heaped soup spoon raw honey 3 heaped soup spoons coconut oil Either blitz together in a food processor or beat frantically with a wooden spoon until a smooth light paste. Spread on greaseproof to desired thickness and chill until hard (roughly 30 mins). Whilst that's ...
