Walnut Almond Bread

Can’t buy walnut flour where you are? Neither can I so I just make my own. For reasons of pure laziness I buy shelled walnuts then blitz them in my tiny food processor until they’re a fine powder. Don’t over pulse though or you’ll release more of the walnut oil and end up with nut butter, more on those delicious possibilities in future recipes.
Ingredients.

250g walnut flour. 

50g cold butter cut into cubes, plus an extra tbsp.

2 tsp bicarb of soda.

2 eggs, lightly beaten.

1 1/2 tbsp honey.

2 tbsp apple vinegar.

1 tsp salt.
Method. Preheat oven to 180
Tip all ingredients into your food processor. Pulse until it starts to come together in a ball. Empty into a bowl and use your hands to form it, don’t worry it is a bit sticky but if worried add a little more flour.
Heat extra tbsp of butter in a small oven tray. Put your roll of bread in the tray and press down slightly. Make a deep cut crossways in the dough. Bake for approximately 25 mins. Leave to cool completely.  
p.s. I find this very crumbly on day one, leave it in a tin and the following day it should cut much easier. Don’t through away the crumbly bits, toss them in some hot butter or oil and add seasonings to taste. Who says you can’t have croutons!
