Homemade Paneer, Tomato & Spinach Curry
If only I'd known years ago just how simple, cheap and delicious paneer was to make myself! Thanks to a friend, Sheena, for sharing your recipe. It takes just 2 ingredients and roughly 10 minutes of "hands on" time.

Leave the rest in the fridge for the next day or cook them all and eat them cold with dips! Note: they need refrigerating for a few hours before cooking, quite delicate so need that time to toughen up!

My only comment would be that it takes ages to simmer the lentils, if I could I'd probably buy them pre-cooked! (Not laziness, simply power consumption on a boat talking).

Delicious both hot and cold, served with the feta & red pepper dip they were truly amazing. The mixture is not easy to shape as it's quite wet. I ended up scooping it out with a tablespoon, place dollops on baking paper in an oven tray.

Many years ago I was fortunate to holiday with good friends in Kenya. These lovely people are of Indian origin, born in Kenya and have an amazing circle of friends and family both at their Mombasa and Diani beach residences.
