Crunchy nuts with gorgeous dried fruit, coconut and flaxseed. Really delicious on its own or, my favourite, with chopped fresh fruit and some Greek yoghurt. Brilliant power snack!
1 cup of roughly chopped walnuts.

Crunchy Peanut Butter & Chocolate Chunk Cookies
Crunchy peanut flavour with, hen still warm, molten chunks of chocolate oozing as you bite. Well, these certainly hit the spot! Simple as can be, everything is mixed in the same bowl and the mixture isn't too sticky. Perfect for everyone and definitely those with young children wanting to get them hands on in the galley.

Chocolate Coffee Amaretto Mousse
I know, it's a bit naughty but I can't be good all the time!
Melt 175 grams of dark chocolate. Cool slightly then add a shot of espresso and 2 tblsp of amaretto. Separate 3 eggs. Add the yolks to the chocolate. Whisk the whites. Add a generous spoon to the chocolate mixture to loosen it then carefully fold the rest in.
Crush some amaretti biscuits until they resemble breadcrumbs. Add a good splosh of amaretto liqueur.

A Simple Tea Loaf
There are moments when only a slice of cake can help. Start the night before please!
200g currants or sultanas soaked overnight in hot tea (I used 2 Lady Grey tea bags)
300g almond flour
50g coconut flour
3 heaped soup spoons of honey
2 heaped soup spoons of coconut oil

Chocolate Coconut Bites
My first attempt, not very pretty but tasty? Oh yes! If I'd remembered to spread the paste on greaseproof paper they would've been far easier to remove.
100g coconut (desiccated or flour, I only had flour)
1 heaped soup spoon raw honey
3 heaped soup spoons coconut oil

Melting Chocolate Pudding
Light sponge exterior with a naughty, nutty oozing puddle of chocolate sauce as soon as you dig in. Have I sold the concept yet? So simple but looks like you've worked really hard, shush don't tell anyone!
Ingredients to make 4 individual puddings.
150g dark chocolate (minimum 70%)
2 tbsp honey
Melt these together until butter fully melted over a pan of barely simmering water. Remove from heat, stir and leave for a minute or so to cool.
