Let’s “tweak” that trusty Chicken Shnitzel, bring on the blue cheese and smoked ham!

Make ahead, takes minutes to cook and tastes really good. Definitely worthy of serving to guests! Just the 2 of us so one plump chicken breast cut in half lengthways. Blitz some nuts (I only had walnuts) and mix with freshly ground black pepper. Press your chicken slices into the nut mixture then chill (so you can do this and veg n the morning then just cook chicken and reheat vegetables). If you don't like nuts use breadcrumbs!        Heat olive oil and butter hot, in ...

Pack your Veg with flavour please

I love vegetables, raw; steamed; baked you name it. That doesn't mean they can't get "dressed up" a little.    Gently simmering carrot batons with a tiny bit of water, a couple of fresh sprigs of thyme, some lemon peel and a small knob of butter made them smell amazing! Season to taste after cooking. Drain the cooking liquid into a bowl. Dice an onion and some garlic, gently sauté. Chop some spinach or other leaves and add to the pan. Splash in a little of the carrot cooking ...

Slow cooked Belly Pork with Asian flavours

A much underrated and cheap joint of meat, yes it's fatty but that means you can cook for ages and skim the fat off yet it stays so moist and tender. Tons more belly pork recipes to come over the winter! It takes just a few minutes to prepare then switch on the slow cooker and enjoy the really good aroma wafting away for best part of the day. (I'm a lazy cook so it seems..)   You'll need 500g or more of belly pork to serve 2 people, it shrinks when cooked! Just chop an onion, bash a few ...

Tomato & Basil Soup

I truly love soups so welcome the onset of slightly colder days to enjoy them to the fullest.  What can be better than a steaming bowl of goodness for a delicious and healthy lunch? This one is simplicity itself!   Sweat down a diced red onion with a couple of cloves of garlic in a little olive oil, be patient as you want the flavour to be sweet.  Add some very ripe freshly chopped tomatoes and simmer down until slightly pulpy. Secret ingredient here, a good knob of butter ...

Comfort Food Chicken Pie (effortless)!

So here's the 2nd meal from my chicken. Prepared in minutes, baked for less than half an hour. I could get used to this type of cooking :)   Sauté onions with a small pack of bacon lardons.  Add some chopped mushrooms, a drained tin of sweetcorn and a small pack of frozen peas.    Shred some chicken and use some of the jellied stock.  Add to the pan, season to taste.     Feel free to splash a little white wine in or chopped herbs (I just used a ...

Perfect Herb & Lemon Roast Chicken

The motto of "you get what you pay for" is true in many ways and definitely when it comes to good food.  This free range chicken weighed 2.4kg and cost 8,47 euro.  It's going to feed us the roast, then a pie, enough for a salad and then stock to freeze plus a good 3 days of chicken broth lunches. Happy days! The Beast!    The Herb & Butter "stuffing" Parsley, sage, rosemary and thyme chopped very finely.  Mix with zest of 1 lemon (don't throw the lemon away) ...

Rich Minced Meat Sauce

The weathers a changing, time for some Autumn comfort food and using my favourite slow cooker.  The one I've got is a Morphy Richards and it's just terrific as the pan is metal so you can sauté, sear and cook everything in one pan! Sounds good eh? Only trouble is it doesn't work on my induction hob so had to use a frying pan to begin, stupid gas hob playing up yet again....    Sauté: 1 finely diced red onion, 1 finely diced white onion, 2 fat cloves of chopped garlic, a ...

Tastier than takeaway Chinese Pork and Mushrooms

Disclaimer: We're in Southern Sicily, like I'd get a takeaway delivered here anyway! Tender pork tenderloin (pork fillet) marinated in ginger, garlic, chilli, light soy, hoisin, honey and 5 spice. Yep, cheat night and I can't wait :). Not sure as I write this what to serve it with, stir fried noodles or cauliflower rice? Did I mention it's cheat night?  The marinade: 1 tsp Chinese 5 spice powder, 2 cloves grated garlic, knob of grated garlic, 1 chopped chilli, 1 tsp honey, ...

Coconut Beef and Sweet Potato Curry

Missing ingredient definitely spinach! Lovely wilted in at the end, it wasn't on my shopping list...I'm useless without a compete list! That said I did have a couple of handfuls of sugar snap peas left, so in they went.   It really doesn't take very long and then the curry just merrily cooks away in your slow cooker/thermal cooker/ stove top or in the oven.  (Our slow cooker works off of our 12v through the inverter, many people I know have a "thermal cooker" usually a metal pan ...

Chicken breast filled with Melting Blue Cheese, Chestnut Mushrooms, wrapped in Bacon

Seriously this was so good, I'd happily serve it to guests.  Actually prepared yesterday but then we decided to go out, took out of the fridge today an hour before cooking and it worked perfectly (another reason I'd be delighted to make for a supper party!).  Checking the dish, the smell coming from the oven was just to die for.   All you need is: 2 chicken breasts, 6 slices of bacon. 1 red onion, finely diced. 1 clove of garlic, grated. Finely diced chestnut mushrooms, I had 4 ...
