Scotch Eggs

Brilliant power packed food, I promise you won’t be hungry after eating one of these! We usually share one with a big salad, ok sometimes I eat the whole thing..

If you can source them try making mini ones using Quails eggs. 
Ingredients to make 4:
4 hard boiled eggs, shelled.

500g gluten free sausage.

Freshly ground black pepper.

A pinch of mace, optional – tastes good though!

1 egg, beaten.

100g almonds.
Method: Preheat oven to 180
First blitz your almonds until finely chopped but not without texture. Tip onto a plate. Don’t wash the processor.

Squeeze sausage meat out of casing and blitz until a smoother paste. See I saved you some washing up, bonus! Tip into a bowl, add black pepper and mace to taste.  

Using your hands take a 1/4 of the meat, pat it out in your hand and place an egg on top. Gently smooth the meat paste around the egg, make sure egg is completely covered. You want a good coating. Repeat with other eggs.

Then dip each one in beaten egg and roll in chopped almonds.

Bake for 30 mins.
