Crunchy Peanut Butter & Chocolate Chunk Cookies

Crunchy peanut flavour with, hen still warm, molten chunks of chocolate oozing as you bite. Well, these certainly hit the spot! Simple as can be, everything is mixed in the same bowl and the mixture isn’t too sticky. Perfect for everyone and definitely those with young children wanting to get them hands on in the galley.

Cream together 200g of peanut butter, smooth or crunchy, with 150g of light brown sugar and a tsp of vanilla extract. 

Add an egg and 3 tblsp of milk, mix well. Then 170g of plain flour and half a tsp of baking powder. Add 150g of chunked dark chocolate. Mix all together until the mixture is fully combined. If it’s too stiff add an extra tblsp of milk.

Roll into balls and flatten slightly. Up to you how big they are, I made 24 cookies from this mixture.

Line a wire rack with baking paper. Bake at 200 degrees for roughly 14 minutes. They are still very soft when you take them out of the oven, I’d suggest letting them cool on the wire rack.
