Absolutely delicious both hot and at room temperature. Crumble some feta over to make it a more substantial meal. Do use good quality olive oil. Oven 190 degrees. Grab a large roasting tin and layer the vegetables in this order: Peel and thickly slice a couple of potatoes (I used just one big sweet potato). 1 large onion, sliced. A couple of aubergines, courgettes, red and green pepper, about 6 ripe vine tomatoes all thickly sliced. Lots of chopped parsley, some salt and freshly ground black pepper.
Pour over 50ml of olive oil and 150ml of passata.
Bake for an hour 🙂 The Boss, who doesn’t usually like this type of dish, had seconds!!
