Fish Pie with Butternut Squash and Cauliflower Mash
This takes a while but is definitely worth the effort. I bought a selection of fish at the market this morning. A salmon steak, white fish steak (I have no idea what it is!) and a few king prawns only cost 6 euro and it's enough for two meals.
For the mash: simmer cauliflower florets and diced butternut squash in whole milk until soft. Pour the milk into a bowl for later and mash then season the mashed vegetables.

Seriously I'd never successfully poached an egg in my life so I quickly made another one to make sure it wasn't a fluke! Organic fresh egg at room temperature, crack into a pan of rolling simmering water with a tsp of vinegar and a pinch of salt. Gently shape the egg and simmer for 4 minutes.

Easy Friday night supper and, bonus, I had too much meat so made double and froze the other 2 for another day.

Yeah I know this is easy peasy but many of us in the Mediterranean like fajitas but can't buy readily made stuff (plus the packs are full of sugar and sodium). Anyhow this works well for us, find your spice blend and kindly share it with me? :-)

Lamb Quarter Pounders
One food we're truly going to miss from Greece is the incredible lamb, if I could I'd stock my freezer up but alas no room.

Stuffed Portobello Mushrooms
Beautiful fresh portobello mushrooms paired with tangy blue cheese and oven baked. So delicious, to be honest the tiny lamb skewers weren't needed but the meat needed eating. Gluttony and very full, happy tummies!
Just give the mushrooms a wipe. Finely chop the stalks, a diced onion and some garlic then sauté for a few minutes in a little olive oil.
