Wow was I sceptical about this! Selling the idea to the Boss was even harder but it’s so delicious as you’ll see from the erm photo…
Ingredients.
Half a head of really fresh, firm cauliflower.
Now all you do with this is wash and dry it VERY well, you don’t want mush! Break into small florets and tip into the food processor. Pulse until the cauliflower resembles small grains. Don’t over pulse! You could pour this onto a clean drying up cloth and gently pat to remove any excess liquid, I don’t find that I need to.
In a frying pan heat a little oil and add whatever you want basically.
I use different types of sliced mushrooms, finely diced red onion, spring onions including the green tops and so on. Sauté your chosen veg for a few minutes then add the cauliflower grains and sauté for roughly 4 mins. You may need to add a spoon of oil to cook the cauliflower. Season to taste.
Either serve this alongside your protein of choice or, if feeling lazy and have left over chicken for example, tear up and add to the rice dish for an easy one pan meal.
When choosing your veg to add to the rice think about colour combinations, I’m a true believer in devouring food with the eyes.
