Crumbly Lemon Shortbread

Delicious with a cup of tea mid afternoon, also really good as a night watch snack! Get more juice out of your lemon by rolling and gently pressing it on a work top.

Ingredients.
100g melted butter.

200g almond flour.

3 tbsp honey (more if you have a sweet tooth).

2 eggs, lightly beaten.

Zest and juice of 1 unwaxed lemon.

1 tsp bicarb of soda.
Method. Preheat oven to 180.
Mix all together in a large mixing bowl to a smooth, lump free dough.
Press into a greased 9 inch pan with your hands. Prick surface and bake for approximately 20 mins. Leave to cool in the tin before cutting into squares.
