This is so versatile and delicious. Serve with a rich wild mushroom sauce, buttered sautéed cabbage and crunchy roast veg for an impressive (but oh so simple) meal or, allow to go cold and cut into thick slabs to have with salad perhaps with a spicy dressing? 

450g minced beef

100g Italian style sausage (or any gluten free sausage but hey I’m in Italy!)

2 medium sized carrots

2 medium sized courgettes

1 red onion

2 spring onions

40g almond flour

1 egg, beaten

1 tsp mustard

1 tsp tomato paste

Fresh mint and parsley

Black pepper
Method. Preheat oven to 180 
Blitz carrots, courgettes, onions and herbs in a blender until very finely chopped. Sauté for a few mins until slightly softened and fragrant.

In a large bowl mix together the meats with all other ingredients. Use your hands to ensure everything is well combined.

Again by hand press into a greased loaf tin and bake for 50 mins.
