Blue Cheese Burgers


Yay, summer is coming! Well it feels that way here in Sicily. Nights are brighter, food becomes lighter and these burgers were delicious.


Ratio of cheese to minced meat? I used about 25 grams to 100 grams of meat.

Basic recipe for 2 hungry people was: 400 grams minced beef; 100 grams blue cheese (I used Gorgonzola); a handful of finely chopped spring onion tops (or use chives); a dash of hot sauce; a tsp of mustard; a dash of Lea & Perrins; black pepper. Squidge it all together and refrigerate for a couple of hours. Shape into burgers, love my burger press, and grill for about 3 mins either side. Leave to rest.

The coleslaw was finely shredded red cabbage; grated carrot and finely chopped spring onions. The dressing: mayonnaise; juice of half an orange; dash of hot sauce; a tsp of mustard and a little salt and pepper.

Sweet potato baked chips were first tossed in a little oil; paprika; thyme leaves; a little orange zest and seasoning. Bake for 35 mins at 200 degrees.
