Lemon, Ginger & Mint Iced Tea
I can't be alone in saying just drinking water (lots and lots as it's so hot) is getting a bit boring. Quick, easy to make and it must be better than shop bought filled with various additives. If you've got a supply of herbal teas give this a whirl! For this I used lemon and ginger herbal infused teabags.
To make 1 litre:

Gorgonzola & Red Wine Jelly Puffs
Still feeling Christmassy and tons of bits in the fridge. These would be great as part of a buffet.
Just unroll a sheet of prepared puff pastry. Cut large circles or use, as I did, a big star cutter. Into the middle of each one put a small chunk of Gorgonzola and a little cranberry sauce, redcurrant jelly or spiced red wine jelly if you made the recipe I posted last week.

Sardines on Toast
This is so very simple and makes a quick, tasty lunch if served with salad. Your local fish market will undoubtedly have sardines, here in Sicily they fillet them and are ridiculously cheap (in fact when I got these, along with other fish, they just gave me the sardines for free!)
Slice your walnut bread.
So I got 8 filleted sardines which was enough for the 2 of us.
