Cauliflower Fried Rice
Wow was I sceptical about this! Selling the idea to the Boss was even harder but it's so delicious as you'll see from the erm photo...
Half a head of really fresh, firm cauliflower.
Now all you do with this is wash and dry it VERY well, you don't want mush! Break into small florets and tip into the food processor. Pulse until the cauliflower resembles small grains. Don't over pulse! You could pour this onto a clean drying up cloth and gently pat to remove any excess liquid, I ...
Walnut Almond Bread
Can't buy walnut flour where you are? Neither can I so I just make my own. For reasons of pure laziness I buy shelled walnuts then blitz them in my tiny food processor until they're a fine powder. Don't over pulse though or you'll release more of the walnut oil and end up with nut butter, more on those delicious possibilities in future recipes.
250g walnut flour.
50g cold butter cut into cubes, plus an extra tbsp.
2 tsp bicarb of soda.
2 eggs, lightly beaten.
1 1/2 ...

Coconut Almond Pancakes
Definitely more like an American pancake but they don't get little bubbles when cooking as you're used to and take a little persuading to hold their shape in the beginning. Or perhaps I was just being impatient? Anyhow I poured my heaped spoonful in, waited until it started setting and then gently coaxed it into the shape I wanted with a spatula. Flip over when you're ready and just a little more prodding to shape.
3 tbsp coconut flour
3 tbsp almond flour
4 tbsp ...
Citrus Chicken Thighs
Juicy, packed full of flavour and just as good cold the following day. If you have leftovers that is. Cook in the oven or better still on the BBQ.
4 chicken thighs, skin on. I prefer them with bone in, more flavour I believe.
Zest and juice of 1 orange.
Zest and juice of 1 lemon.
2 cloves of garlic, grated.
1 tsp honey.
2 tbs oil of your choice.
Freshly ground black pepper.
Make one or two slashes in the chicken. Combine all the ingredients in a non metallic ...
Lemon Meringue Pie
This isn't something I make very often as it does take time but well worth the effort for a special occasion.
Ingredients for the pastry.
190g almond flour.
2 tbsp cold butter cut into cubes.
Pinch of salt.
Method. Grease and line a 20cm springform tin. Preheat oven to 180.
Combine in a food processor, tip into a bowl and gently press into a smooth ball. Don't overwork it. Press the dough in your tin using hands, raise up the sides a little for the filling. Make sure there are no ...
Sesame Tuna with Spicy Salad, Crunchy Courgettes and Ginger Dressing.
We love this. It looks like it took me ages but didn't, that's a definite bonus!
So first make the dressing.
2 tbsp oil of your choice.
2 finely chopped spring onions including green tops.
4cm piece of root ginger, grated.
1 clove of garlic, grated.
1/2 of a de seeded red chilli, diced (more by all means).
Zest and juice of 1 unwaxed lime.
Few drops of sesame oil (caution: very powerful flavour).
Splash of soy sauce or coconut aminos.
Gently heat oil. Add onions, ginger, garlic ...
Brilliant power packed food, I promise you won't be hungry after eating one of these! We usually share one with a big salad, ok sometimes I eat the whole thing..
If you can source them try making mini ones using Quails eggs.

500g gluten free sausage.
Freshly ground black pepper.
A pinch of mace, optional - tastes good though!

For stability buy one of those cheap "noodles" or use the horseshoe life device.
Easy warm up and cool down, either tread water (on warm up you may like to go a bit faster) or put your hands on your hips and make wide frog like hip rotations out then in. Feel free to make frog noises if it makes you happy!
For both circle your arms with full range of movement, again out then in.
Aim for 5 mins.
Here are just a few exercises you can do, I will add more as soon as the water warms up enough for ...
This is so versatile and delicious. Serve with a rich wild mushroom sauce, buttered sautéed cabbage and crunchy roast veg for an impressive (but oh so simple) meal or, allow to go cold and cut into thick slabs to have with salad perhaps with a spicy dressing?

2 medium sized courgettes
