Spiced Chocolate Cupcakes 

  
Made these yesterday as a thank you gift. I’m weird as don’t like cake really but these smelled incredible and the Boss scoffed one as soon as they were cool enough to handle. My friends emailed asking for the recipe so here it is!

Preheat oven to 180 degrees.

Cream together 200g of softened butter and 200g of sugar.  Beat 4 eggs and add gradually (if the mixture curdles just add a spoon of flour and be more patient adding the rest of the egg!). Gently fold in 200g of self raising flour, 2 tsp of mixed spice and 4 tblsp of pure cocoa powder.

Divide between 12 cupcake cases and bake for 15 mins.  I checked mine after this time and decided they needed and extra 3 minutes. Take out of the oven and cool.

Good as they looked I wanted to make them a bit more special. So cream together 50g of butter with icing sugar until you’ve got the consistency you want. Add 1/2 a tsp of good quality vanilla bean extract.  Please don’t use the artificial flavouring, it spoils everything. Omit flavouring or maybe add a small amount of finely grated orange zest? At least you know these flavours work! 

Cut the top off the cupcakes, pop a spoon of icing on and place the lid back on. Easy peasy 🙂
