Spinach Pesto

Having ordered a whole kilo of spinach from the local organic farmer I had to find lots of uses. Just call me Popeye! 

So it was 100 grams of spinach, a handful of basil leaves, zest and juice of 1 lemon, 2 fat cloves of garlic, 60 grams of pine nuts and 30 grams of walnuts. 50 grams of grated Parmesan cheese (but then I added more to taste), good quality extra virgin olive oil.

Just blitz it all together to a smooth paste then add salt, pepper and extra cheese until it tastes good to you. Also on the lemon juice, perhaps just add half then taste and see what works for you. Food is so personal in my opinion.

Pop in a jar and add olive oil to cover the surface so it doesn’t dry out. Gorgeous, vibrant, raw food with a multitude of uses 🙂
