Vegetable noodles with Chinese flavoured Meatballs

Again no, I’m not on commission but wow – this cheap piece of kit is good! So I used this to prepare 1 courgette, 2 carrots and a chunk of butternut squash. Looks fantastic right?

For the meatballs:  200g of mince (beef, pork or chicken)

  

Grate garlic , ginger and chilli to suit your taste. Chop a sping onion and coriander. Into a non metallic bowl pop 1 1/2 tblsp of hoisin sauce and 1 of oyster sauce. Add 1/2 tsp of Chinese five spice,  some black pepper and a good tblsp of oil (I used coconut). Cover and leave for an hour or so for flavours to develop.

Shape into balls and shallow fry for 6 minutes, turning occasionally. Take care as they are delicate with no egg or bread to bind them.


Drain on kitchen towel then stir fry the noodles in a little chicken broth or water, put the meatballs on top and heat through for a few minutes.

Limitless combinations which I can’t wait to try out, food is so exciting! (Maybe I need to get out more?) 🙂
