Stuffed Roasted Butternut Squash

So one of the daughters asks me what my new blue cheese fixation is all about? Blaming my OCD so it's my current obsession! This is delicious, I looked at tons of recipes and adapted to suit my taste. Hope you like it! Halve a butternut squash, scrape out the seeds. Pop in a baking tray, add some chopped garlic and a bay leaf or two. Drizzle with olive oil, season well then add a knob of butter. Bake at 180 degrees for 40 minutes. Sauté a couple of shallots and a generous handful of ...

Sicilian Style Fish Soup

Ooh, I genuinely hope you enjoy this as much as I did! Inexpensive, simple and so flavoursome. For the fish stock either make your own as in the Fish Pie from last week or use bought stock. I must admit making my own in the boat leaves a fishy smell for a couple of days... Finely chop a couple of shallots, 2 celery stalks, some finely chopped fennel, a de seeded chilli and a couple of cloves of grated garlic until softened. Add grated butternut squash and grated carrot (this thickens ...

Braised Cabbage Wedges with Melting Cheese and Crushed Walnuts

Don't you feel bad for cabbage being depicted as boring and tasteless? This was an experimental dish but happy with the result. Chop a couple of onions and sauté until softened. Add a chopped clove of garlic. Cut your cabbage into wedges (tip: they only stay whole if you keep the stem intact..) Add to the pan and fry for a couple of minutes, turn then over and fry for another couple of minutes for flavour and colour.  Add a good cup of vegetable stock and simmer for 8 mins. Season to ...

Baked Vegetable and Cheese stuffed Aubegine Rolls

Honestly our boat looks like a harvest celebration right now, I've gone way overboard (pardon the pun) with buying gorgeous organic vegetables and then they also had organic goat milk cheese! Well, it would've been rude not to buy it! The cheese I've got is Pecorino, easy to grate but not too soft. It's mild, substitute for mozzarella perhaps?    Chop a selection of vegetables: red onions, leeks, courgettes - whatever you fancy. Sauté them with chopped garlic, cool then add grated ...

Fish Pie with Butternut Squash and Cauliflower Mash

This takes a while but is definitely worth the effort.  I bought a selection of fish at the market this morning. A salmon steak, white fish steak (I have no idea what it is!) and a few king prawns only cost 6 euro and it's enough for two meals. For the mash: simmer cauliflower florets and diced butternut squash in whole milk until soft. Pour the milk into a bowl for later and mash then season the mashed vegetables.     For the fish stock: peel the prawns (if you don't ...

Vegetable noodles with Chinese flavoured Meatballs

I think I'm in love with my spiralizer gadget http://www.amazon.co.uk/Premium-Spiralizer-Vegetable-Mandoline-Spaghetti/dp/B00JPLDX86/ref=sr_1_2?ie=UTF8&qid=1453736891&sr=8-2&keywords=Premium+slicer Again no, I'm not on commission but wow - this cheap piece of kit is good! So I used this to prepare 1 courgette, 2 carrots and a chunk of butternut squash. Looks fantastic right? For the meatballs:  200g of mince (beef, pork or chicken)    Grate garlic , ginger and ...

Spiced Beef and Vegetable Tagine

This was really lovely served with cauliflower rice. Very healthy and packed with flavour!  Substitute the beef for pork or chicken, I guess a firm fish would work? Let me know, thanks :) Ok, we've all got our own tastes when it comes to spice so here are the ingredients rather than quantities Cube the protein and add grated ginger, grated garlic, paprika powder, ground cinnamon, freshly chopped chilli, black pepper, a little salt and a splash of oil. Leave flavours to mingle for an ...

Vegetable & Blue Cheese Lasagne

Sauté whatever vegetables you like until softened. I used red onions, garlic, diced butternut squash, chopped leeks and broccoli then added shredded basil and a couple of handfuls of spinach. Pour in a tin of chopped tomatoes, season and simmer until reduced.    Make a white sauce with ground almonds (delicious) or cornstarch, season with black pepper and grated nutmeg and melt in mild blue cheese to taste. I used Gorgonzola dolce.   Layer white sauce and vegetable sauce ...

Honey & Orange Glazed Roast Duck

A real treat meal for two. Ducks don't have a lot of meat on them so my 2.2kg duck was genuinely just enough for the two of us!    Pat the duck skin dry with kitchen towel, prick the skin several times and season with salt. In the cavity goes a quartered orange, half an onion and a couple of bay leaves. Preheat your oven to 200 degrees. Put the duck on a rack in a roasting tin. It needs to be on a rack to enure the skin becomes really crispy. Roast for an hour. Melt a ...

Amazing Mash without the carb overload

Ooh this is so delicious! We love sweet potato but it can, at times, be a tad too sweet. Combining vegetables obviously ups the nutrition and does wonders for the flavour. I've used this to top our cottage pie and am so excited for supper tonight!     Peel and cube 2 medium sized sweet potatoes, wash and break half a head of cauliflower. Add about 80 ml of water, season and simmer for approximately 10 minutes until soft. You may need to add a little water half way ...
