Comfort Food Chicken Pie (effortless)!
So here's the 2nd meal from my chicken. Prepared in minutes, baked for less than half an hour. I could get used to this type of cooking :)
Sauté onions with a small pack of bacon lardons. Add some chopped mushrooms, a drained tin of sweetcorn and a small pack of frozen peas.
Shred some chicken and use some of the jellied stock. Add to the pan, season to taste.

Perfect Herb & Lemon Roast Chicken
The motto of "you get what you pay for" is true in many ways and definitely when it comes to good food. This free range chicken weighed 2.4kg and cost 8,47 euro. It's going to feed us the roast, then a pie, enough for a salad and then stock to freeze plus a good 3 days of chicken broth lunches. Happy days!

Seriously this was so good, I'd happily serve it to guests. Actually prepared yesterday but then we decided to go out, took out of the fridge today an hour before cooking and it worked perfectly (another reason I'd be delighted to make for a supper party!). Yeah I know this is easy peasy but many of us in the Mediterranean like fajitas but can't buy readily made stuff (plus the packs are full of sugar and sodium). Anyhow this works well for us, find your spice blend and kindly share it with me? :-)
It's really ridiculously easy, follow your taste buds and combine:
Sea salt and freshly ground black pepper.
Ground cumin, chilli powder, sweet paprika powder, a little cinnamon, dried ground oregano.
