   Fragrantly spiced cauliflower florets with just the right amount of crunch, delicious!    Break half a large cauliflower into florets. In a bowl mix grated ginger; garlic and chilli to suit your taste. Add 2 tblsp each of coconut oil; light soy sauce and coconut milk plus a squirt of Agave syrup or honey. Sweet and Spicy Roasted Vegetables with Tahini Sauce

Delicious way to combine vegetables, equally tasty hot or cold. Oven needs to be quite hot, I set mine to 190 degrees and turned the veg over halfway through cooking. Chop your chosen selection of vegetables. I had butternut squash; red onions; carrots; cauliflower and broccoli. Braised Cabbage Wedges with Melting Cheese and Crushed Walnuts

Don't you feel bad for cabbage being depicted as boring and tasteless? This was an experimental dish but happy with the result. Chop a couple of onions and sauté until softened. Add a chopped clove of garlic. Cut your cabbage into wedges (tip: they only stay whole if you keep the stem intact..) Spinach Pesto

Having ordered a whole kilo of spinach from the local organic farmer I had to find lots of uses. Just call me Popeye!     So it was 100 grams of spinach, a handful of basil leaves, zest and juice of 1 lemon, 2 fat cloves of garlic, 60 grams of pine nuts and 30 grams of walnuts. 50 grams of grated Parmesan cheese (but then I added more to taste), good quality extra virgin olive oil. Such delicious wholesome goodness just bursting with zesty flavour. The key is that everything gets chopped really small then give the flavours a few minutes to develop.  Simply chop a variety of tomatoes, onion, olives, hard boiled egg and parsley.  Season with sea salt, add good quality olive oil and a generous squeeze of lemon juice.  Wait for five minutes or so then dig in! We had ours with this incredible seafood spread :)    

Caramelised Sweet Potato & Cabbage Bake

Quick to make then just bake in the oven alongside a gorgeous roast or baked fish.   Finely shred half a head of cabbage and an onion. Season and pop in an ovenproof dish.  Slice sweet potatoes in a saucepan, add a couple of knobs of butter and season with salt, pepper and grated nutmeg.    Sweet red onions stuffed with sausage meat and wrapped in prosciutto, what's not to like?     You'll need fairly large red onions, cut them in half keeping the root whole.
