Fragrantly spiced cauliflower florets with just the right amount of crunch, delicious!
Break half a large cauliflower into florets. In a bowl mix grated ginger; garlic and chilli to suit your taste. Add 2 tblsp each of coconut oil; light soy sauce and coconut milk plus a squirt of Agave syrup or honey. Mix and add extra chilli if wanted, I put some dried chilli flakes in. Massage the cauliflower to coat well, leave for up to a day for flavours to develop.

Stuffed Roasted Butternut Squash
So one of the daughters asks me what my new blue cheese fixation is all about? Blaming my OCD so it's my current obsession! This is delicious, I looked at tons of recipes and adapted to suit my taste. Hope you like it!

Sweet and Spicy Roasted Vegetables with Tahini Sauce
Delicious way to combine vegetables, equally tasty hot or cold. Oven needs to be quite hot, I set mine to 190 degrees and turned the veg over halfway through cooking.
Chop your chosen selection of vegetables. I had butternut squash; red onions; carrots; cauliflower and broccoli. Steam these for 8 mins then put in a roasting tray with some garlic and chunked courgettes. Drizzle with a little olive oil and black pepper then bake for 30 minutes.

Don't you feel bad for cabbage being depicted as boring and tasteless? This was an experimental dish but happy with the result.

Having ordered a whole kilo of spinach from the local organic farmer I had to find lots of uses. Just call me Popeye!
So it was 100 grams of spinach, a handful of basil leaves, zest and juice of 1 lemon, 2 fat cloves of garlic, 60 grams of pine nuts and 30 grams of walnuts. 50 grams of grated Parmesan cheese (but then I added more to taste), good quality extra virgin olive oil.

Such delicious wholesome goodness just bursting with zesty flavour. The key is that everything gets chopped really small then give the flavours a few minutes to develop.
Simply chop a variety of tomatoes, onion, olives, hard boiled egg and parsley. Season with sea salt, add good quality olive oil and a generous squeeze of lemon juice.
Wait for five minutes or so then dig in! We had ours with this incredible seafood spread :)
Caramelised Sweet Potato & Cabbage Bake
Quick to make then just bake in the oven alongside a gorgeous roast or baked fish.
Finely shred half a head of cabbage and an onion. Season and pop in an ovenproof dish.
Slice sweet potatoes in a saucepan, add a couple of knobs of butter and season with salt, pepper and grated nutmeg. I added a cinnamon stick too.

Gorgonzola & Red Wine Jelly Puffs
Still feeling Christmassy and tons of bits in the fridge. These would be great as part of a buffet.
Just unroll a sheet of prepared puff pastry. Cut large circles or use, as I did, a big star cutter. Into the middle of each one put a small chunk of Gorgonzola and a little cranberry sauce, redcurrant jelly or spiced red wine jelly if you made the recipe I posted last week.
