Homemade Paneer, Tomato & Spinach Curry

If only I'd known years ago just how simple, cheap and delicious paneer was to make myself! Thanks to a friend, Sheena, for sharing your recipe. It takes just 2 ingredients and roughly 10 minutes of "hands on" time. Paneer: Note this makes a small block, just over 200g. You need a large saucepan, a large bowl lined with cheesecloth set over a pan to catch the whey, something to weigh it down when setting. 1 litre whole fresh milk. 3 tsp lemon juice.  In a large saucepan bring the milk to ...

Vegetarian Stew

A warm hug on a plate! So easy and ridiculously cheap to make, I made too much so have frozen single portions.  Ingredients: 1 large red onion, finely chopped. 2 cloves of garlic, crushed. 1 large leek, washed and chopped. 1 medium sweet potato, peeled and diced. A chunk of pumpkin or butternut squash, peeled and diced. 2 large carrots, peeled and diced. Half a cauliflower, broken into small florets. Half a head of broccoli, broken into small florets. 1 small tin of kidney beans, rinsed ...

Veggie Burgers

Chickpea, carrot, red pepper, onions and lots of spices. These are really delicious, very simple to make and if you make too much? Leave the rest in the fridge for the next day or cook them all and eat them cold with dips! Note: they need refrigerating for a few hours before cooking, quite delicate so need that time to toughen up!  Ingredients:100g of fresh brown bread crumbs. 1 can of chickpeas, drained and rinsed. 1 red onion, roughly chopped. 2 carrots, grated. 1 red pepper, roughly ...

Tarka Dhal

My only comment would be that it takes ages to simmer the lentils, if I could I'd probably buy them pre-cooked! (Not laziness, simply power consumption on a boat talking).  Ingredients: 200g dried yellow split peas. Rinse them well then cover with about a litre of water in a saucepan and simmer for about 35 minutes, or until they're softened. Skim the foam off the top and stir occasionally throughout cooking. By the end of the cooking time there won't be much water left in the pan, just ...

Spiced Red Pepper Falafel

Delicious both hot and cold, served with the feta & red pepper dip they were truly amazing.  The mixture is not easy to shape as it's quite wet. I ended up scooping it out with a tablespoon, place dollops on baking paper in an oven tray.  Ingredients: 1 tin of chickpeas, drained and rinsed. 1 medium sized red onion, very finely diced. 2 cloves of garlic, grated. 1 roasted red pepper (from a jar), very finely diced. Small knob of ginger, grated. 2 tsp ground cumin. 1 tsp ground ...

Vegan Cauliflower, Red Pepper & Pea Curry

Quite spicy, feel free to change the amount of chilli, very satisfying. I think next time I may add a couple of spoons of coconut milk? Anyhow continuing the healthy "please can my cholesterol lower" scheme this is supper tonight!  Ingredients, Vegetables: 2 red onions, finely sliced. 2 cloves of garlic, grated. A tbsp grated ginger. 1 red pepper, thinly sliced. 1 small cauliflower, break into florets.  1 or 2 chillies, seeds moved and sliced thinly. 3 medium sized tomatoes, diced. ...

Vegetarian Chilli

Believe me the flavours are so good I doubt you'll miss having meat in it.  Ingredients: 1 large red onion, diced. 2 cloves of garlic, sliced. 2 small aubergines and 2 courgettes, chunked. 1 red and green pepper, chunked. 1 deseeded red chilli, diced. 1/2 tsp each of ground cumin; coriander; hot chilli pepper. 1 tin of chopped tomatoes. 1 tin of kidney beans, drained and rinsed. Gala Meatloaf

Very simple to make and equally good for lunch with salad or for supper with perhaps grilled vegetables. Pickles and chutneys on the side and that's it! Ingredients: 3 hard boiled eggs. 700g minced beef or turkey. 1 finely diced spring onion. 1 medium sized carrot, grated. 1 clove of garlic. Salt, pepper, sweet paprika powder. Very finely chopped parsley. Barbecue sauce to glaze, optional. Pre-heat oven to 280 degrees. Butter a 1k capacity loaf tin. Sauté the onion, carrot and garlic for ...

Aubergine, Tomato & Sweet Potato Curry

Many years ago I was fortunate to holiday with good friends in Kenya. These lovely people are of Indian origin, born in Kenya and have an amazing circle of friends and family both at their Mombasa and Diani beach residences. Anyhow, one of the "aunties" is such an awesome cook. Her version of this is far superior to mine but would she relinquish a recipe? Heck no.... For now this is as close as I'm going to get to that. Happy with the result, it's fiery; creamy and packed with delicious ...

Chicken Burgers

As with most things I post, the seasonings and added bits can be changed to suit whatever you fancy. I don't think I ever truly make anything exactly as the last time. Actually before starting this blog I could never remember what I'd done before... Into 500g of minced chicken breast I've added 1 very finely chopped spring onion, half a very finely diced red onion and a clove of grated garlic.  Then sweet paprika powder, dried oregano and a little salt and black pepper.  Mix ...
