Herby Vegetable Couscous
For a grain free version just whizz cauliflower florets until they resemble grains then sauté and season.
Packed with herbs and vegetables, this is such a good side dish for any grilled foods.
Roasted vegetables: Chunk an onion, separate cauliflower florets, add a few spring onions including the thicker green stems as well as some wedges of radicchio (Italian chicory). Or use normal chicory, it's the slight bitterness you're looking for.
Toss the vegetables in a little oil and seasoning. I ...
Just a few ingredients poured over the chicken and left happily in the fridge for a few hours before grilling. I chose to cut the huge chicken breast into 4 pieces but there's no reason why it couldn't be turned into kebabs or maybe the base for a stir fry?
Simply combine some grated garlic and ginger. A couple of tblsp of ketjap manis (Indonesian soy sauce) or soy sauce and honey. Add freshly chopped chilli to taste, ground black pepper and a glug of vegetable oil.
Add the ...
Southern Style Baked Chicken
Having lusted over making this for ages I stalked the internet greedily reading lots of recipes before coming up with this. I'm very happy with the result, truly drool worthy, but next time I'd suggest dipping in melted butter then in the coating twice to get a good covering that (hopefully) won't fall off in parts.
Easy peasy lemon squeezy! That's my poor pun at making the buttermilk to soak the chicken in overnight. If you can buy buttermilk go for it. Here we can't so into a bowl goes ...
Blue Cheese Burgers
Yay, summer is coming! Well it feels that way here in Sicily. Nights are brighter, food becomes lighter and these burgers were delicious.
Ratio of cheese to minced meat? I used about 25 grams to 100 grams of meat.
Basic recipe for 2 hungry people was: 400 grams minced beef; 100 grams blue cheese (I used Gorgonzola); a handful of finely chopped spring onion tops (or use chives); a dash of hot sauce; a tsp of mustard; a dash of Lea & Perrins; black pepper. Squidge it all together ...
Portuguese style Chicken Broth
This simple but full of flavour broth was definitely a favourite of mine when living in the Algarve. Just a few ingredients and time is all you need!
Start making chicken stock. I put the left over chicken and carcass from a roast chicken in my slow cooker, add a chopped onion; a few peppercorns; a couple of bay leaves; the rind from half a lemon and a few sprigs of fresh mint. Cover with water and switch it on. Mine cooked on low for 8 hrs, you could pressure cook it I guess?
Definitely not an authentic recipe, I played around with it and this with ground almonds is our current winner dinner! Creamy, spicy and tender - delicious. It takes a while but is very simple as long as you're organised. Marinate chicken overnight then just grill, set aside while making the sauce and combine.
450 grams to ½ kg chicken (or 1 lb.)
Juice of one small lemon
1/2 tsp. Salt
1/2 tsp. Chilli powder (hot or mild, it's up to you)
Tasty Pork Tenderloin Medallions
Cut the pork tenderloin into thick medallions. In a non metallic bowl mix together the following.
4 tblsp of Soy sauce, juice of one small orange, a couple of tblsp ketchup, good splash of Lea & Perrins, a tblsp of honey, a couple of tblsp of oil, grated garlic and ginger, some chilli flakes. Taste and adjust to suit you.
Marinate the pork for a good few hours. Remove pork, shake off excess sauce and grill for roughly 4 mins either side. Let the pork rest for a few minutes. ...
Lemon, Honey & Thyme Rack of Lamb
Wow it was devoured very quickly!
My rack of lamb weighed just over 900 grams. Marinated for 2 hours in equal quantities of olive oil; honey and lemon juice plus 3 cloves of grated garlic; a good tblsp of chopped thyme; zest of 1 lemon; salt and pepper to taste; 1/2 tsp of chilli flakes.
Put the lamb on a wire tray over a roasting tin and cook for 25 minutes at 200 degrees. Rest for 10 minutes.
Bubble the juices for a minute or two to create a sauce.&n...
These, for us, are the perfect sailing lunch/snack. Today was blowing a steady 7 gusting 9 in the marina and I was bored so here you go - pasties!
To make 6 pasties I used one medium sized potato, 2 small carrots and 1 red onion plus 200g of beef and 2 rolls of shop bought puff pastry as well as an egg for glazing. Flavour combinations are endless, chicken & mushroom; beef and blue cheese or strictly vegetarian. Method and cooking time remains the same, fill ya boots ...
Curried Roast Chicken
I'm a huge fan of one pot cooking, preferably those that slow cook filling the air with delicious aroma. Hopefully you've got a pot big enough to hold the sauce and chicken, saves washing up! Best of all knowing all the work is done and, if you're not too greedy, this one is enough for three meals! Roast today, chicken pot pie in a couple of days then a base for a fantastic curried soup.
I made the spice mixture but you could substitute Massaman curry paste for speed?
